Main contents: The Rules stipulate that in the course of procurement of raw materials, processing, packaging, storage and transport, ice confection enterprises shall meet the standard or ensure desirable conditions are met regarding the arrangement of the staff concerned, construction and equipment, as well as the management of hygiene, production and quality (Article 2). Part Two concerns the definition of ice confection and they are categorized into ice cream, ice cream bar, ice lolly, ice frost, sweet ice and edible ice. Part Three concerns the establishment of processing factories for ice confection, including requirements on the environment and workshop of the processing factory. Part Four concerns processing equipment of ice confection, Part Five quality control of ice confection and Part Six factory hygiene management.
